While visiting the Texas Hill Country we had the pleasure of eating at one of the most highly-rated restaurants in the country, the Cabernet Grill. The restaurant is run to perfection by Ross Burtwell, chef/owner, his wife Mariana Burtwell, chef/owner, and their son, Hunter, sous chef. In choosing this restaurant we noticed they served Faroe Island salmon, one of the most delicious salmons on this planet. We knew then that the owners strived for perfection and adhered to the highest quality of food to be served. (See Faroe Island Salmon footnote, bottom page.) The Texas Hill Country is around an hour and a half from Austin. The Cabernet Grill is located on the outskirts of Fredericksburg, the hub of the Texas Hill Country.

We loved the rustic, warm, and friendly atmosphere. Thank goodness, no tablecloths, we hate spilling on them 😉 yet we loved the cloth napkins. There is a lovely koi pond outside as you enter the restaurant.

The meal started with a surprise of a large shot glass of Roasted Carrot Ancho Soup to kick off and awaken our food senses, delicious!

Moving on we had a house salad, mesclun greens, pepitas, crispy wonton strips, and a choice of ginger-lime vinaigrette or green onion ranch dressing. The salad was perfectly seasoned with subtle flavors that tease your palate. For an appetizer, we chose the Jumbo Lump Crab Gratin, jumbo lump crab broiled with red chile garlic butter, asiago cheese; bread crumbs. The crab was fresh Maryland blue crab, tender and sweet, covered and baked with asiago cheese.

For our first visit to the Texas Hill Country, we absolutely had to try their  Texas Prime Center cut filet mignon, 8 oz., 1800-degree broiled. OMG, I can’t remember having a better filet.  Ruth’s Chris filet could not even compete with this perfectly cooked rare, tender as butter, excellent flavored filet! This was a good value for an 8 oz filet which is hard to come by. We chose smashed potatoes as a side.

As you can see by the photo, the Faroe Island Salmon was a large portion topped with Caper olive chimichurri. The salmon was fresh and cooked to perfection with a flaky center. Our side dish was Maple Chipotle Sweet Potato Mash. Our next dish was a generous, tasty portion of Grilled Pork Tenderloin Medallions with Ginger Cinnamon Shallot Butter and zested Honey Mustard. Ever so tasty, tender, and flavorful. The side dish was a medley of veggies again seasoned to perfection.

The meal ended with a Warm Butterscotch Bread Pudding with salted caramel ice cream and walnuts. A heavenly ending!

Besides the food that sets Cabernet Grill apart is the 100% Texas wine list. For more than 10 years, the Cabernet Grill has featured only Texas wines, today offering nearly 200 wines from more than 50 wineries on its list.

Hats off to Sean our waiter, Ross, Mariana, and Hunter. who made it a wonderful dining experience. Yall surpassed the good things people told us about your restaurant.

The Texas Hill Country is around an hour and a half from Austin. The Cabernet Grill is located on the outskirts of Fredricksburg, the hub of the Texas Hill Country. Definitely worth a visit or two!!
